Beef Galbi & Gochujang stew

beef galbi & gochujang stew

400g beef sirloin or rump
5 tbsp galbi sauce
4 tsbp Yogiyo Gochujang
5 spring onions thinly sliced
1 carrot chopped into matchsticks
1 courgette thinly chopped
handful of shiitake mushrooms
handful of oyster mushrooms

Approx 1O00ml Beef stock
(enough to cover vegetables)

Method

  1. Coat beef with Galbi sauce and marinate for 30 minutes
  2. Arrange vegetables around the side of a deep pan or pot and place marinated beef. pour the Gochujang over vegetables
  3. Pour beef stock and bring to the boil
  4. Turn the heat down, cover and simmer for 15- 20 minutes
  5. Serve with rice
